Vineyard Notes
The grapes for this blend all come from the estate vineyard. Vine age averages about 30 years for both varieties. The inspiration for this wine was to create a GSM blend.
Production Notes
These grapes were hand-harvested on October 9th and October 10. Fermentation consisted of a 3-day cold soak and a 10-day fermentation. The final blend consists of 60% Mourvedre, and 40% Syrah. The wine was barrel-aged in 40% new French and 60% neutral oak for 18 months.
Food Pairing Notes
This wine would pair well with grilled meat such as skirt steak, tri-tip, braised short ribs, or kebabs. It also could be paired well with cheese and charcuterie pairings such as stilton, gorgonzola, parmesan, and aged gruyere.
