2021 Estate Ankora Cabernet Sauvignon
Aromas of brambly fruit, tart raspberries, contrasted by sweet plums. On the palate this wine has chewy structured tannins, its fresh and well balanced. This wine will age well because of its minerality, balance of acidity and tannin structure.

Vineyard Notes
Cabernet Sauvignon sourced from our estate vineyard in the Santa Clara AVA located in the Central Coast. This particular block we harvested from is the back block which consists of younger vines. However this section is very rocky with a sloop which helps moderate vigor and ripening some of our favorite blocks we grow. This block consists primarily of clones 7 and 8 on SO4 and 5c rootstock.
Winemaker Notes
The grapes were hand harvested in early September with a 2 day cold soak on skins followed by a 14 day fermentation. 15 months of elevage and aging in 42% new French oak.
Food Pairing Notes
Lamb, carnitas, grilled food and burgers would all be great compliments. This wine would pair really well with winter food because it's a fresher style of cabernet with balanced alcohol, however its tannin structure would help moderate rich dishes.
