Sauvignon Blanc sourced from vineyards in the Santa Clara AVA located in the Central Coast
The grapes were hand harvested and whole bunch pressed on a gentle cycle. The juice was allowed to undergo a cold settling for several days then racked off lees. Cool fermentation lasted 19 days in stainless steel tanks. The wine was then allowed to age in stainless steel for four months prior to bottling.
