Chardonnay sourced from Zabala Vineyard in the Arroyo Seco AVA. Farmed with organic farming practices.
Winemaker Notes
The grapes were hand harvested and whole bunch pressed. Native yeast fermentation lasted 20 days. Elevage was carried out for 4 months in French oak barrels for 4 months. The blend consisted of 33% new French oak.
Food Pairing Notes
This wine would pair well with a contrast of flavors such as an herbed parmesan risotto topped with chanterelle mushrooms. Roasted rosemary chicken and potatoes would also work nicely.
